Ingredients

  • 4 pieces (6 oz each) salmon fillets
  • 8 oz rice noodles
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar
  • 1 tablespoon lime juice
  • 2 tablespoons vegetable oil
  • 2 cloves, minced garlic
  • 1 tablespoon, minced ginger
  • 3 stalks, thinly sliced scallions
  • 2 tablespoons, chopped cilantro
  • 1 piece, thinly sliced red chili
  • 1 teaspoon salt
  • 0.5 teaspoon pepper

Directions

Step 1

Prepare the rice noodles according to the package instructions. Drain and set aside.

Season the salmon fillets with salt and pepper on both sides.

Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Place the salmon fillets skin-side down and cook for 3-4 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
