Ingredients

  • 4 pieces Chicken thighs (bone-in, skin-on)
  • 4 cloves Garlic cloves
  • 2 tablespoons Cilantro stems (chopped)
  • 1 stalk Lemongrass (white part only, finely chopped)
  • 3 tablespoons Fish sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Brown sugar
  • 1 teaspoon Ground white pepper
  • 2 tablespoons Fresh lime juice
  • 2 pieces Thai chili peppers (finely chopped)
  • 1 tablespoon Palm sugar (or substitute with brown sugar)
  • 3 tablespoons Rice vinegar
  • 2 tablespoons Water
  • 1 teaspoon Cornstarch
  • 1 teaspoon Cooking oil
  • 2 tablespoons Fresh cilantro leaves (for garnish)

Directions

Step 1

Prepare the marinade: In a mortar and pestle or food processor, combine garlic cloves, cilantro stems, and lemongrass. Pound or blend everything into a rough paste.

Step 2

In a large mixing bowl, combine the prepared herb paste with fish sauce, soy sauce, brown sugar, and ground white pepper. Mix well.

Step 3

Add the chicken thighs to the bowl and ensure they are thoroughly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to develop.

Step 4

Preheat your grill to medium-high heat. Oil the grates lightly to prevent sticking.

Step 5

Remove the chicken from the marinade and allow any excess to drip off. Grill the chicken skin-side down for 6-8 minutes, then flip and continue grilling for another 6-8 minutes, or until the internal temperature reaches 165°F (74°C).

Step 6

While the chicken is grilling, prepare the dipping sauce: In a small saucepan, combine lime juice, Thai chili peppers, palm sugar, rice vinegar, and water. Heat over low-medium heat until the sugar dissolves.

Step 7

Mix the cornstarch with a teaspoon of water to create a slurry. Add the slurry to the saucepan and cook for another 1-2 minutes, stirring frequently, until the sauce thickens slightly. Remove from heat and let it cool to room temperature.

Step 8

Once the chicken is fully cooked, remove it from the grill and let it rest for a few minutes before serving.

Step 9

Garnish the grilled chicken with fresh cilantro leaves and serve with the spicy sweet and sour dipping sauce on the side.
