Ingredients

  • 500 g beef sirloin, thinly sliced
  • 150 g baby spinach
  • 200 g button mushrooms, sliced
  • 2 medium potatoes, diced into small cubes
  • 3 tbsp vegetable oil
  • 2 medium red chili, finely chopped
  • 3 garlic cloves, minced
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 tsp ground black pepper
  • 1 cup water
  • 1 lime, for garnish
  • 2 tbsp fresh cilantro, chopped

Directions

Step 1

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.

Step 2

Add the diced potatoes and cook for 8-10 minutes, stirring occasionally, until golden and tender. Remove from the pan and set aside.

Step 3

In the same pan, add the remaining 1 tablespoon of oil. Add the minced garlic and chopped red chili, and stir-fry for 1 minute until fragrant.

Step 4

Add the sliced beef to the pan and stir-fry for 3-4 minutes until it is browned but not fully cooked. Remove the beef and set it aside with the potatoes.

Step 5

Add the sliced mushrooms to the pan and cook for 3-4 minutes until they release their water and begin to brown.

Step 6

In a small bowl, combine the soy sauce, oyster sauce, fish sauce, brown sugar, ground black pepper, and water. Mix well to create the sauce.

Step 7

Return the beef and potatoes to the pan, and pour the sauce over them. Stir to coat evenly and simmer for 5 minutes until the flavors meld and the beef is fully cooked.

Step 8

Add the baby spinach to the pan and cook for 2-3 minutes until wilted.

Step 9

Remove the pan from heat and garnish with fresh cilantro and lime wedges. Serve hot with steamed rice or enjoy on its own.
