Ingredients

  • 1 pound Chicken breast
  • 4 cups Cooked jasmine rice (day-old, chilled)
  • 2 tablespoons Vegetable oil
  • 4 cloves Garlic cloves, minced
  • 2 pieces Red chili peppers, finely chopped (adjust to taste)
  • 1 piece Shallot, thinly sliced
  • 1 cup Thai basil leaves
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Fish sauce
  • 1 teaspoon Dark soy sauce
  • 1 teaspoon Sugar
  • 2 pieces Eggs, lightly beaten
  • 2 stalks Scallions, chopped
  • 4 pieces Lime wedges, for serving

Directions

Step 1

Cut the chicken breast into thin, bite-sized pieces and set aside.

Step 2

In a small bowl, mix the soy sauce, oyster sauce, fish sauce, dark soy sauce, and sugar until well combined. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Step 4

Add the minced garlic and chopped chili peppers to the hot oil and stir-fry for about 30 seconds until fragrant.

Step 5

Add the sliced chicken to the wok and stir-fry for 3-5 minutes, or until the chicken is fully cooked.

Push the chicken to one side of the wok and add the remaining 1 tablespoon of vegetable oil to the empty side.
