Ingredients

  • 1 medium (about 2 lbs) whole snapper
  • 2 tablespoons, julienned fresh ginger
  • 4 cloves, thinly sliced garlic
  • 3 whole, split lengthwise red bird's eye chilies
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 teaspoon sugar
  • 3 tablespoons water
  • 2 tablespoons, chopped fresh cilantro
  • 1 stalk, julienned spring onions

Directions

Step 1

Clean and gut the whole snapper, removing scales and rinsing it thoroughly under cold water. Pat dry with paper towels.

Step 2

Score the snapper on both sides with shallow diagonal cuts to help the seasonings penetrate. Place the fish on a heatproof plate or dish that fits inside your steamer.

Step 3

In a small bowl, mix together lime juice, fish sauce, sugar, and water until the sugar dissolves. This will be your seasoning liquid.

Step 4

Spread the julienned ginger, sliced garlic, and bird's eye chilies over and inside the cavity of the snapper.

Step 5

Pour the seasoning liquid evenly over the fish.

Step 6

Prepare a steamer by bringing water in the pot to a boil. Place the plate with the snapper inside the steamer basket and cover with the lid.

Step 7

Steam the snapper over medium heat for 15-20 minutes, or until the flesh flakes easily with a fork. The exact cooking time will depend on the size of the fish.

Step 8

Carefully remove the plate from the steamer and garnish the fish with chopped cilantro and julienned spring onions.

Step 9

Serve immediately with steamed jasmine rice or as part of a larger Thai meal.
