Ingredients

  • 2 lb Chicken wings
  • 1 cup Coconut milk
  • 0.333 cup Peanut butter (smooth)
  • 3 tbsp Soy sauce
  • 2 tbsp Lime juice
  • 2 tbsp Brown sugar
  • 3 cloves Garlic (minced)
  • 1 tsp Ground ginger
  • 1 tbsp Chili paste or Sriracha
  • 1 tbsp Fish sauce
  • 2 tbsp Vegetable oil
  • 2 tbsp Crushed peanuts (for garnish)
  • 2 tbsp Fresh cilantro (for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper and place an oven-safe wire rack on top.

Step 2

Pat the chicken wings dry with paper towels and arrange them on the wire rack. Lightly brush the wings with 1 tbsp of vegetable oil and sprinkle with salt and pepper.

Step 3

Bake the wings in the preheated oven for 35-40 minutes, turning them halfway through to ensure even cooking. The wings should be crisp and golden brown.

While the wings are cooking, prepare the Thai satay sauce. In a medium saucepan over medium heat, combine the coconut milk, peanut butter, soy sauce, lime juice, brown sugar, minced garlic, ground ginger, chili paste, and fish sauce.
