Ingredients

  • 10 pieces Dried red chiles
  • 4 pieces Garlic cloves
  • 2 pieces Shallots
  • 2 tablespoons Tamarind paste
  • 2 tablespoons Palm sugar
  • 1.5 tablespoons Fish sauce
  • 1 tablespoon Lime juice
  • 2 tablespoons Water
  • 2 tablespoons Vegetable oil

Directions

Step 1

Place the dried red chiles in a bowl and pour warm water over them. Let them soak for 10 minutes until they soften. Drain and set aside.

Step 2

In a mortar and pestle or blender, add the softened chiles, garlic cloves, and shallots. Pound or blend into a smooth paste. You can add 1 tablespoon of water if needed to help with blending.

Step 3

Heat the vegetable oil in a small saucepan over medium heat. Add the chili paste and sauté for 2–3 minutes, stirring constantly, until fragrant.
