  • 8 pieces wooden skewers (soaked in water for 30 minutes)
  • 2 tablespoons fresh cilantro (chopped, for garnish)
  • 2 tablespoons chopped peanuts (for garnish)

Directions

Step 1

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

In a large bowl, toss the pumpkin cubes with 1 tablespoon of vegetable oil and the salt until evenly coated.
