  • 3 tablespoons Fish sauce (or soy sauce for vegetarian option)
  • 3 tablespoons Fresh lime juice
  • 2 medium Tomatoes
  • 1 cup White button mushrooms
  • 1 small bunch Fresh cilantro
  • 1 teaspoon Sugar
  • 1 tablespoon Chili paste (optional, for added heat)

Directions

Step 1

Slice off the tough base of the lemongrass stalks and remove the outer layers. Bruise the stalks using the back of a knife, then slice them into 2-inch pieces.

Step 2

In a large pot, bring the chicken or vegetable broth to a boil over medium-high heat.

Step 3

Add the lemongrass, galangal, and kaffir lime leaves to the boiling broth. Reduce heat to medium and simmer for 5 minutes to infuse the flavors.
