  • 2 tablespoons Fish sauce
  • 1 tablespoon Brown sugar
  • 1 cup Mushrooms (sliced)
  • 1 Red bell pepper (thinly sliced)
  • 2 cups Baby spinach
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh cilantro (chopped)
  • 2 cups Cooked jasmine rice (optional)

Directions

Step 1

Heat the olive oil or coconut oil in a large pot over medium heat.

Step 2

Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
