Ingredients

  • 500 g white fish fillets (e.g., cod or haddock)
  • 150 g prawns, peeled and deveined
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tsp lime zest
  • 1 tbsp lime juice
  • 1 large egg
  • 2 tbsp cornflour
  • 2 pieces spring onions, finely sliced
  • 2 tbsp fresh coriander, roughly chopped
  • 500 ml vegetable oil (for frying)
  • 100 g mayonnaise
  • 1 piece bird's eye chilli, finely chopped
  • 1 tbsp lime juice (for mayonnaise)
  • 1 tsp salt
  • 0.5 tsp pepper

Directions

Step 1

Place the fish fillets and prawns into a food processor. Pulse until roughly minced.

Step 2

Add red curry paste, fish sauce, lime zest, lime juice, egg, cornflour, spring onions, coriander, salt, and pepper to the food processor. Blend until well combined into a sticky mixture.

Step 3

Using lightly oiled hands, scoop out small portions of the mixture and roll them into balls, about the size of a walnut. Set aside on a plate.

Step 4

Heat the vegetable oil in a deep pan or wok over medium-high heat. Test the oil by dropping a small piece of bread into it—if it sizzles and rises to the surface, the oil is ready.

Step 5

Fry the fish balls in batches to avoid overcrowding the pan. Cook for 4-5 minutes, turning occasionally, until golden brown and cooked through. Remove with a slotted spoon and place on a plate lined with paper towels to drain excess oil.

To make the chilli and lime mayonnaise, stir together the mayonnaise, finely chopped chilli, and lime juice in a small bowl. Adjust the seasoning with a pinch of salt if needed.
