Ingredients

  • 2 medium cucumber
  • 1 medium carrot
  • 0.5 medium red onion
  • 0.25 cup cilantro leaves
  • 0.5 cup roasted peanuts
  • 1 small Thai bird's eye chili
  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon light brown sugar
  • 1 teaspoon sesame oil

Directions

Step 1

Peel the cucumbers partially, leaving some stripes of skin for texture. Cut them in half lengthwise and scoop out the seeds with a spoon. Slice the cucumbers into thin half-moons and place them in a mixing bowl.

Step 2

Peel the carrot and julienne it into thin matchstick-size pieces. Add to the mixing bowl with the cucumbers.

Step 3

Finely slice the red onion and add it to the bowl as well.

Step 4

Chop the cilantro leaves roughly and add to the mixture.

Step 5

Roughly chop the roasted peanuts, leaving some larger pieces for texture, and set aside.

Step 6

Finely mince the Thai bird’s eye chili, being cautious of its strong heat. Add it to a small bowl for the dressing.

Step 7

In the small bowl with the chili, whisk together the lime juice, fish sauce, light brown sugar, and sesame oil until the sugar dissolves completely.

Step 8

Pour the dressing over the cucumber mixture and toss well to coat all the ingredients evenly.

Step 9

Sprinkle the chopped peanuts over the top and gently toss again to incorporate.

Step 10

Serve immediately as a side dish or relish. For best results, enjoy the salad fresh to maintain its crunch and vibrant flavors.
