  • 3 tablespoons Orange juice
  • 1 tablespoon Fish sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Honey
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh ginger, grated
  • 1 tablespoon Vegetable oil
  • 6 cups Mixed salad greens
  • 1 medium Cucumber, thinly sliced
  • 1 large Carrot, julienned
  • 1 medium Red bell pepper, thinly sliced
  • 0.5 cup Fresh cilantro leaves
  • 0.25 cup Roasted peanuts, chopped

  • 1 small Red chili, finely sliced (optional for spice)

Directions

Step 1

Season the chicken breasts lightly with salt and pepper on both sides.

Step 2

Heat the vegetable oil in a skillet over medium heat. Cook the chicken breasts for about 6-8 minutes per side, or until fully cooked through and golden brown. Remove from the skillet and let rest for 5 minutes before slicing thinly.

Step 4

In a large bowl, combine the salad greens, cucumber, carrot, red bell pepper, and cilantro.

Step 5

Add the sliced chicken on top of the salad mixture.

Step 6

Drizzle the dressing over the salad and gently toss to combine.

Step 7

Sprinkle the roasted peanuts, sesame seeds, and red chili (if using) on top as garnishes.

Step 8

Serve the salad immediately and enjoy the vibrant citrus and Thai-inspired flavors!
