Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Cornstarch
  • 2 tbsp Vegetable oil
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 1 Red bell pepper, thinly sliced
  • 1 Carrot, julienned
  • 1 cup Snow peas
  • 1 cup Coconut milk
  • 2 tbsp Soy sauce
  • 1 tbsp Fish sauce
  • 1 tbsp Brown sugar
  • 1 tbsp Lime juice
  • 0.5 cup Cilantro, chopped
  • 4 servings Cooked jasmine rice (for serving)

Directions

Step 1

Cut the chicken breasts into thin strips and season with salt, pepper, and cornstarch. Toss to coat evenly and set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken strips to the skillet and cook for 4–5 minutes, stirring occasionally, until the chicken is golden and cooked through. Remove the chicken and set aside on a plate.
