Ingredients

  • 1 lb boneless, skinless chicken breast
  • 2 mandarin oranges (peeled and segmented)
  • 1 cup fresh Thai basil leaves

  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 0.5 tsp red chili flakes
  • 1 tbsp lime juice
  • 2 tbsp vegetable oil
  • 3 cloves garlic (minced)
  • 1 red bell pepper (thinly sliced)
  • 0.5 yellow onion (sliced)
  • 1 tsp cornstarch
  • 2 tbsp cold water
  • 4 servings jasmine rice, cooked

Directions

Step 1

Cut the chicken breast into thin strips and set aside.

Step 2

In a small bowl, mix the soy sauce, fish sauce, brown sugar, lime juice, and red chili flakes. Stir until the sugar dissolves. Set the sauce aside.

In another small bowl, dissolve the cornstarch in cold water and set aside for thickening later.
