Ingredients

  • 500 grams ground chicken
  • 2 pieces puff pastry sheets
  • 50 grams panko breadcrumbs
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 stalk lemongrass, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon lime zest
  • 2 tablespoons cilantro (coriander) leaves, finely chopped
  • 1 piece small red chili, finely chopped (optional)
  • 1 piece egg, lightly beaten
  • 1 tablespoon sesame seeds (for garnish)
  • 4 tablespoons sweet chili sauce
  • 1 tablespoon lime juice
  • 1 teaspoon fresh basil leaves, finely chopped (for dipping sauce)

Directions

Step 1

Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

In a mixing bowl, combine the ground chicken, panko breadcrumbs, fish sauce, soy sauce, lemongrass, garlic, ginger, lime zest, cilantro, and red chili (if using). Mix thoroughly until all ingredients are well incorporated.

On a lightly floured surface, roll out the puff pastry sheets and cut each into two long rectangles.

Divide the chicken mixture into four equal portions and shape each portion into a long log, placing it lengthwise along the center of each pastry rectangle.
