  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp lime juice
  • 1 tsp Sriracha or chili paste
  • 2 tbsp water

Directions

Step 1

Cut the boneless, skinless chicken thighs into thin strips, approximately 1 inch wide.

In a medium bowl, whisk together 1 cup of coconut milk, 2 tablespoons of soy sauce, 1 tablespoon of brown sugar, 1 teaspoon of ground turmeric, 1 teaspoon of ground coriander, 2 minced garlic cloves, 1 tablespoon of minced ginger, and 1 tablespoon of vegetable oil to create the marinade.

Add the chicken strips to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
