Ingredients

  • 200 grams Rice noodles
  • 2 pieces Cooked chicken breast, shredded
  • 1 medium Carrot, julienned
  • 1 medium Red bell pepper, thinly sliced
  • 1 small Cucumber, julienned
  • 3 stalks Green onions, sliced
  • 0.5 cup Fresh cilantro, chopped
  • 0.25 cup Fresh mint, chopped
  • 0.25 cup Roasted peanuts, chopped
  • 3 tablespoons Gluten-free soy sauce or tamari
  • 2 tablespoons Natural peanut butter
  • 2 tablespoons Lime juice
  • 1 tablespoon Honey or maple syrup
  • 1 teaspoon Sesame oil
  • 1 clove Garlic, minced
  • 1 teaspoon Fresh ginger, grated
  • 0.25 teaspoon Crushed red chili flakes (optional)

Directions

Step 1

Bring a pot of water to a boil. Cook the rice noodles according to the package instructions until tender. Drain and rinse under cold water to stop the cooking process. Set aside.

In a medium bowl, prepare the dressing by whisking together the gluten-free soy sauce or tamari, peanut butter, lime juice, honey or maple syrup, sesame oil, minced garlic, grated ginger, and crushed red chili flakes (if using). Adjust seasoning to taste.
