Ingredients

  • 1 lb Ground chicken
  • 3 Garlic cloves, minced
  • 2 Shallots, finely chopped
  • 0.5 cup Fresh cilantro leaves, chopped
  • 2 tablespoons Fish sauce
  • 1 tablespoon Soy sauce
  • 1 teaspoon Brown sugar
  • 0.25 teaspoon Ground white pepper
  • 10 Lemongrass stalks (outer layers removed, trimmed to about 6-7 inches)
  • 1 tablespoon Vegetable oil (for grilling)
  • 0.5 cup Sweet chili sauce (for serving)

Directions

Step 1

In a large mixing bowl, combine the ground chicken, minced garlic, chopped shallots, chopped cilantro, fish sauce, soy sauce, brown sugar, and ground white pepper. Mix thoroughly until the ingredients are well incorporated.

Step 2

Divide the chicken mixture into 10 equal portions, about 2-3 tablespoons per portion.

Step 3

Take a portion of the chicken mixture and mold it around the top half of a lemongrass stalk, pressing tightly to ensure it sticks. Repeat with the remaining chicken mixture and lemongrass stalks.

Step 4

Preheat a grill or grill pan over medium-high heat and lightly brush it with vegetable oil to prevent sticking.

Step 5

Place the chicken-wrapped lemongrass sticks on the grill. Cook for about 6-8 minutes on each side, turning carefully, until the chicken is fully cooked and golden brown.

Step 6

Remove the cooked chicken lemon sticks from the grill and let them rest for 2-3 minutes.

Step 7

Serve warm with sweet chili sauce on the side for dipping.
