  • 4 cardamom pods
  • 1 cinnamon stick
  • 2 bay leaves
  • 2 tablespoons fish sauce
  • 1 tablespoon tamarind paste
  • 2 tablespoons palm sugar (or brown sugar)
  • 2 tablespoons vegetable oil
  • 250 milliliters water
  • 0 lime wedges (for serving)
  • 0 steamed jasmine rice (for serving)

Directions

Step 1

Heat the vegetable oil in a large, heavy-bottomed pot over medium heat.

Step 2

Add the Massaman curry paste and cook for 2-3 minutes, stirring frequently, until fragrant.

Pour in half of the coconut milk and bring it to a gentle simmer. Stir constantly until the oil begins to separate and rise to the surface, about 5-7 minutes.

Add the beef cubes and coat them in the curry mixture. Cook for 4-5 minutes until the beef is lightly browned on the outside.
