Ingredients

  • 500 g Beef sirloin or flank steak
  • 400 ml Coconut milk
  • 200 g Bamboo shoots (canned, sliced)
  • 3 tbsp Thai red curry paste
  • 2 tbsp Vegetable oil
  • 2 tbsp Fish sauce
  • 1 tbsp Brown sugar
  • 10 leaves Thai basil leaves
  • 3 leaves Kaffir lime leaves (optional)
  • 1 piece Red chili (sliced, optional for garnish)
  • 100 ml Water
  • 0.5 tsp Salt

Directions

Step 1

Thinly slice the beef sirloin or flank steak into bite-sized pieces. Set aside.

Step 2

Heat the vegetable oil in a large skillet or wok over medium heat.

Step 3

Add the Thai red curry paste to the skillet and stir-fry for 1-2 minutes, or until fragrant.

Step 4

Pour in the coconut milk and stir well to combine with the curry paste.

Step 5

Allow the mixture to simmer gently for 2-3 minutes to let the flavors meld together.

Add the sliced beef to the skillet and cook for 3-4 minutes, stirring occasionally, until the beef is just cooked through.

Stir in the bamboo shoots, fish sauce, brown sugar, and water. Mix well and simmer for another 5-7 minutes.
