Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 4 cloves fresh garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 cup coconut milk
  • 1 tablespoon lime juice
  • 1 teaspoon red chili flakes
  • 1 cup sweet chili sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Place the chicken thighs in a large bowl or zip-top bag.

Step 2

In a mixing bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, ground coriander, ground turmeric, coconut milk, lime juice, and red chili flakes. Whisk until well combined.

Step 3

Pour the marinade over the chicken thighs, ensuring they are fully coated. Cover the bowl with plastic wrap or seal the bag and refrigerate for at least 2 hours, preferably overnight.

Step 4

Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.

Step 5

Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken on the grill, skin side down, and cook for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C).

Step 6

While the chicken is grilling, prepare the sweet hot dipping sauce. In a small saucepan over medium heat, combine sweet chili sauce, rice vinegar, granulated sugar, and 1 tablespoon of water.

Step 7

Simmer the sauce for 2-3 minutes, stirring constantly, until slightly thickened. Remove from the heat and stir in the chopped cilantro.

Step 8

Once the chicken is fully cooked, remove it from the grill and let it rest for 5 minutes.

Step 9

Serve the grilled chicken hot with the sweet hot dipping sauce on the side.
