Ingredients

  • 2 cups Graham cracker crumbs
  • 0.5 cup Unsalted butter, melted
  • 2 tablespoons Granulated sugar (for crust)
  • 24 ounces Cream cheese, softened
  • 1 cup Granulated sugar (for filling)
  • 1 cup Sour cream
  • 1 bean Vanilla bean, seeds scraped
  • 1 teaspoon Pure vanilla extract
  • 2 tablespoons All-purpose flour
  • 3 None Large eggs

Directions

Step 1

Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.

Step 2

In a medium bowl, mix together the graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar until the mixture resembles wet sand.

Step 3

Press the crust mixture into the bottom of the springform pan and about 1 inch up the sides. Use the bottom of a measuring cup to press it down firmly. Set aside.

Step 4

In a large mixing bowl, beat the softened cream cheese and 1 cup of granulated sugar together until smooth and creamy, about 2-3 minutes.

Step 5

Add the sour cream, vanilla bean seeds, vanilla extract, and flour. Mix until well combined.

Step 6

Beat in the eggs, one at a time, mixing just until incorporated. Be careful not to overmix to avoid cracking.

Step 7

Pour the cheesecake filling over the prepared crust, smoothing the top with a spatula.

Step 8

Tap the pan gently on the counter to release any air bubbles in the batter.

Step 9

Place the springform pan on a baking sheet and bake in the preheated oven for 60 minutes, or until the edges are set and the center has a slight jiggle.

Step 10

Turn off the oven, crack the oven door slightly, and let the cheesecake cool inside the oven for 1 hour to prevent cracking.

Step 11

Remove the cheesecake from the oven and allow it to cool completely at room temperature before refrigerating for at least 6 hours or overnight.

Step 12

Once chilled, remove the cheesecake from the springform pan, slice, and serve. Enjoy your rich and creamy vanilla bean cheesecake!
