Ingredients

  • 4 large Russet potatoes
  • 1 cup, shredded Cheddar cheese
  • 6 strips, cooked and crumbled Bacon
  • 2 tablespoons, chopped Green onions
  • 0.5 cup (for serving) Sour cream
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

Step 2

Wash the russet potatoes thoroughly and pat them dry with a kitchen towel.

Step 3

Rub the potatoes with 1 tablespoon of olive oil, then place them directly on the oven rack or the prepared baking sheet. Bake for 50-60 minutes, or until the potatoes are tender when pierced with a fork.

Step 4

Remove the potatoes from the oven and allow them to cool for about 10 minutes, until they are safe to handle.

Step 5

Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato on the skin. Reserve the scooped-out flesh for another use (e.g., mashed potatoes).

Step 6

Brush the insides and outsides of the potato skins with the remaining 1 tablespoon of olive oil, and season them with salt and black pepper.

Step 7

Place the potato skins back on the baking sheet, skin-side down, and bake for 10 minutes at 400°F (200°C) to crisp them up.

Step 8

Remove the potato skins from the oven and sprinkle an even amount of shredded cheddar cheese and crumbled bacon onto each one. Return them to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the potato skins from the oven and garnish them with chopped green onions.

Step 10

Serve immediately with sour cream on the side for dipping.
