Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 medium jalapeño, minced
  • 28 ounces diced tomatoes (canned with juices)
  • 4 cups chicken broth
  • 6 corn tortillas, torn into bite-sized pieces
  • 3 cups shredded rotisserie chicken
  • 2 teaspoons cumin powder
  • 1.5 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 large avocado, cubed
  • 1 cup cheddar cheese, shredded
  • 1 cup fried tortilla strips (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, minced garlic, and jalapeño. Sauté for 5 minutes until the onion is soft and translucent.

Step 3

Stir in the cumin, chili powder, smoked paprika, cayenne pepper, salt, and black pepper, cooking for 1 minute to toast the spices.

Step 4

Pour in the canned diced tomatoes with their juices and the chicken broth. Stir to combine.

Step 5

Add the torn corn tortillas to the pot. Bring the mixture to a boil, then reduce the heat to low. Let it simmer for 15-20 minutes, stirring occasionally, until the tortillas break down and thicken the soup.

Step 6

Use an immersion blender to partially blend the soup, leaving some chunks for texture. Alternatively, blend half the soup in a blender and return it to the pot.

Step 7

Stir in the shredded chicken and simmer for another 10 minutes to heat through.

Step 8

Remove the pot from heat and add the lime juice and chopped cilantro. Stir to combine.

Step 9

Ladle the soup into bowls and top with cubed avocado, shredded cheddar cheese, fried tortilla strips, and extra cilantro if desired.

Step 10

Serve hot and enjoy your Texas Thick Spicy Tortilla Soup!
