Ingredients

  • 10 whole Jalapenos
  • 4 whole Garlic cloves
  • 1 medium White onion
  • 3 tablespoons Lime juice
  • 0.25 cup White vinegar
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 2 tablespoons Cilantro (optional)
  • 0.5 cup Water

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or aluminum foil.

Wash and dry the jalapenos. Place them, along with the unpeeled garlic cloves and the peeled and quartered onion, on the prepared baking sheet.

Step 3

Drizzle the olive oil over the vegetables, ensuring everything is lightly coated. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the jalapeno skins are charred and blistered.

Step 4

Remove the baking sheet from the oven and allow the vegetables to cool slightly. Once cool enough to handle, peel the charred skin off the jalapenos and remove their stems. For less heat, remove the seeds and membranes; for maximum spiciness, leave them intact.

Peel the roasted garlic cloves and add them to a blender along with the roasted jalapenos, onion, lime juice, white vinegar, salt, and water.
