Ingredients

  • 1.5 pounds Boneless, skinless chicken thighs
  • 1 large Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 large Carrots, peeled and diced
  • 2 stalks Celery ribs, diced
  • 8 cups Chicken broth
  • 0.5 cups Heavy cream
  • 2.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 2 teaspoons Kosher salt
  • 1 teaspoon Freshly ground black pepper
  • 0.25 teaspoons Cayenne pepper
  • 1 teaspoon Fresh thyme leaves
  • 2 tablespoons Fresh parsley, chopped
  • 4 tablespoons Unsalted butter
  • 0.75 cups Whole milk
  • 1 tablespoon Vegetable oil

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large Dutch oven over medium heat. Add the chicken thighs, season with salt and black pepper, and cook until browned on both sides, about 5 minutes per side. Remove the chicken and set aside.

Step 2

In the same pot, melt 2 tablespoons of butter over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 6-8 minutes.

Step 3

Pour in the chicken broth and bring to a simmer. Return the browned chicken thighs to the pot. Add the thyme leaves, cayenne pepper, and 1 teaspoon of kosher salt. Cover and simmer for 25 minutes, or until the chicken is tender and fully cooked.

Step 4

While the chicken is cooking, prepare the dumplings. In a medium bowl, whisk together 2 cups of flour, baking powder, 1 teaspoon of salt, and 1 teaspoon of black pepper. Add the milk and 2 tablespoons of melted butter, stirring until a soft dough forms.

Step 5

Remove the chicken thighs from the pot and shred them using two forks. Return the shredded chicken to the pot along with the heavy cream and stir to combine.

Step 6

Using a spoon or cookie scoop, drop rounded tablespoons of the dumpling dough onto the surface of the simmering stew. Cover the pot and cook for 12-15 minutes, or until the dumplings are cooked through and fluffy.

Step 7

In a small bowl, mix the remaining 0.5 cups of flour with 0.25 cups of water to make a slurry. Slowly stir this into the stew to thicken it to your desired consistency.

Step 8

Garnish with fresh parsley before serving hot. Enjoy your Texas Rancher Chicken N Dumplings!
