Ingredients

  • 3 lbs russet potatoes
  • 1 cup ranch dressing
  • 1 cup mayonnaise

  • 3 pieces hard-boiled eggs, chopped
  • 2 tbsp fresh parsley, chopped (optional)

Directions

Step 1

Wash and peel the russet potatoes, then cut them into 1-inch cubes.

Step 2

Bring a large pot of water to a boil. Add the potatoes and 1 teaspoon of salt. Cook for 12-15 minutes or until the potatoes are fork-tender. Do not overcook.

Drain the potatoes in a colander and let them cool to room temperature while preparing the dressing.
