Ingredients

  • 1 pound ground beef
  • 1 medium, diced onion
  • 1 medium, diced green bell pepper
  • 2 cloves, minced garlic
  • 14.5 ounces (1 can) diced tomatoes
  • 8 ounces (1 can) tomato sauce
  • 1 cup, uncooked white rice
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 2 tablespoons (optional, for garnish) chopped fresh parsley

Directions

Step 1

Heat the olive oil in a large skillet or Dutch oven over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it into crumbles with a wooden spoon. Drain excess fat if necessary.

Step 3

Stir in the diced onion, green bell pepper, and minced garlic. Cook for 5-7 minutes, or until the vegetables are softened.

Step 4

Add the chili powder, smoked paprika, cumin, salt, and black pepper to the skillet. Stir to combine and let cook for 1 minute to toast the spices.

Step 5

Stir in the uncooked white rice, diced tomatoes (with their juices), tomato sauce, and beef broth. Mix well to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

Step 7

Once cooked, remove the skillet from the heat and sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet again for 2-3 minutes to let the cheese melt.

Step 8

If desired, garnish with chopped fresh parsley before serving.

Step 9

Serve hot and enjoy your Texas Hash Core!
