Start by preparing your rice. Place 2 cups of long-grain rice in a pot with 2.5 cups of chicken broth. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the liquid has been absorbed. Fluff the rice with a fork and set aside covered.
While the rice is cooking, slice the smoked kielbasa sausage into 1/4-inch-thick rounds. Thinly slice the red bell peppers and yellow onion. Trim the ends off the green beans and cut them in half. Mince the three garlic cloves.
Heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat. Add the smoked kielbasa, cooking for 4-5 minutes until lightly browned. Remove the sausage from the skillet and set aside.
In the same skillet, add the sliced onions and red bell peppers. Sauté them for 3-4 minutes until softened. Then add the green beans and cook for another 3 minutes, stirring frequently.
Push the vegetables to one side of the skillet and add the minced garlic, smoked paprika, cumin, and crushed red pepper flakes to the center. Stir the spices and garlic for 30 seconds to bloom their flavors.
Return the browned kielbasa sausage to the skillet. Stir everything together and cook for another 2 minutes.
In a small bowl, whisk together the soy sauce, honey, and 2 tablespoons of water. Pour this mixture into the skillet and stir to coat the ingredients evenly.
