  • 1 teaspoon smoked paprika
  • 14.5 ounces diced tomatoes with green chilies
  • 4 cups chicken broth, low-sodium
  • 15 ounces black beans, rinsed and drained
  • 15 ounces pinto beans, rinsed and drained
  • 1 cup frozen corn
  • 2 tablespoons cilantro, chopped (optional)
  • 4 pieces lime wedges, for serving (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Step 2

Once the oil is hot, add the turkey sausage and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside.

In the same pot, add the diced onion, red bell pepper, and green bell pepper. Sauté for 5 minutes, until vegetables are softened.
