Ingredients

  • 1 pound Ground turkey
  • 2 tablespoons Olive oil
  • 2 tablespoons Taco seasoning
  • 1 cup Black beans (canned, drained and rinsed)
  • 4 cups Romaine lettuce (chopped)
  • 1 cup Cherry tomatoes (halved)
  • 1 cup Corn (fresh or canned, drained)
  • 1 medium Red bell pepper (diced)
  • 1 cup Shredded cheddar cheese
  • 1 cup Tortilla strips or crushed tortilla chips
  • 0.5 cup Ranch dressing
  • 1 tablespoon Lime juice
  • 2 tablespoons Cilantro (chopped)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, about 5-7 minutes. Break the turkey into crumbles as it cooks.

Step 2

Stir in the taco seasoning and 2 tablespoons of water. Mix well to coat the turkey. Cook for another 2 minutes. Remove from heat and let it cool slightly.
