  • 2 tbsp Cilantro, chopped (optional)
  • 2 lbs Russet potatoes, peeled and cubed
  • 4 tbsp Unsalted butter
  • 1 cup Sour cream
  • 0.25 cup Milk
  • 1.5 cups Cheddar cheese, shredded
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the cubed potatoes in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes or until potatoes are fork-tender.

Step 3

While the potatoes cook, heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, about 7-10 minutes. Remove any excess grease.
