  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 14.5 oz Canned diced tomatoes, with juices
  • 2 cups Vegetable broth
  • 1 cup Black beans, rinsed and drained
  • 1 cup Pinto beans, rinsed and drained
  • 1 cup Frozen corn kernels
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh cilantro, chopped
  • 1 medium Lime, cut into wedges

Directions

Step 1

Heat the olive oil in a large, deep skillet or saucepan over medium heat.

Step 2

Add the diced onion, garlic, red bell pepper, and jalapeño. Sauté for 3-4 minutes, until vegetables are softened.

Stir in the rice, smoked paprika, ground cumin, and chili powder. Cook for 1-2 minutes, stirring frequently, to toast the rice and spices.
