Ingredients

  • 1 14.5-ounce can diced tomatoes with green chilies, undrained
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups shredded sharp cheddar cheese
  • 1 cup half-and-half
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 bag tortilla chips, for serving (optional)
  • 1 whole lime wedges, for serving (optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the chicken breasts with a pinch of salt and pepper. Add them to the pot, searing for about 4–5 minutes per side until golden brown. Remove and set aside.

Step 3

Add the remaining tablespoon of olive oil to the pot. Sauté the diced onion, red bell pepper, and jalapeño for 4–5 minutes until softened.
