  • 2 tablespoons taco seasoning mix
  • 2 cups white or brown rice, cooked
  • 2 cups shredded Mexican cheese blend
  • 1 cup sour cream
  • 1 cup tortilla chips, crushed
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)
  • 1 tablespoon olive oil (for sautéing)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish and set aside.
