Ingredients

  • 1 lb ground beef (80/20 blend)
  • 0.5 lb ground pork
  • 1 tsp chipotle chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 jalapeño, finely diced
  • 1 cup shredded cheddar cheese
  • 4 brioche burger buns
  • 0.5 cup guacamole
  • 0.25 cup sour cream
  • 0.5 cup salsa
  • 1 cup iceberg lettuce, shredded
  • 8 tomato slices
  • 0.25 cup pickled jalapeños
  • 1 tbsp oil for grilling (vegetable or canola)

Directions

Step 1

In a large mixing bowl, combine ground beef, ground pork, chipotle chili powder, cumin, paprika, garlic powder, salt, black pepper, and diced jalapeño.

Step 2

Mix the ingredients gently with your hands until evenly combined. Be careful not to overwork the meat mixture as it can make the burgers tough.

Step 3

Divide the mixture into 4 equal portions and form each into a burger patty about ¾-inch thick. Make a small indentation in the center of each patty with your thumb to allow even cooking.

Step 4

Preheat a grill or grill pan over medium-high heat and lightly oil the grates to prevent sticking.

Step 5

Place the patties on the grill and cook for 3-4 minutes per side, or until the internal temperature reaches 160°F (71°C). In the final minute of cooking, sprinkle shredded cheddar cheese on each patty and cover the grill to allow the cheese to melt.

Step 6

Lightly toast the brioche buns on the grill for about 30 seconds while the patties finish cooking.

Step 7

Assemble the burgers: spread guacamole on the bottom half of each bun, then layer with a cheeseburger patty, shredded lettuce, tomato slices, and pickled jalapeños. Optionally, spread sour cream and salsa on the top half of the bun before closing the burger.

Step 8

Serve immediately with your favorite Tex-Mex sides like tortilla chips, elote, or a Mexican corn salad.
