  • 1 pound Ground breakfast sausage
  • 6 whole Eggs
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 small Yellow onion
  • 1 cup Shredded Mexican cheese blend
  • 1 small Jalapeño
  • 2 tablespoons Cilantro
  • 2 tablespoons Milk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Chili powder
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly spray a standard 12-cup muffin tin with cooking spray.

Step 2

Divide the ground breakfast sausage into 12 equal portions. Press each portion into a muffin tin, shaping it to fully line the bottom and sides of each cup to form a 'sausage cup.'

Place the muffin tin in the preheated oven and bake for 10 minutes. The sausage will shrink slightly and release some fat during this time; carefully remove the tin and drain excess grease if needed.
