  • 3 minced Garlic cloves

  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 15-ounce can Canned diced tomatoes
  • 1 15-ounce can, drained and rinsed Canned black beans
  • 1 15-ounce can, drained Canned corn
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 2 thinly sliced Green onions
  • 2 tablespoons, chopped Cilantro
  • 2 tablespoons (optional) Hot sauce or salsa

Directions

Step 1

Preheat the oven to 400°F (200°C).

Scrub the potatoes clean, pat them dry, and poke each potato several times with a fork to allow steam to escape.
