Ingredients

  • 4 medium Zucchini
  • 6 slices Bacon
  • 100 grams Feta Cheese
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 tablespoon Fresh Lemon Juice
  • 1 tablespoon Fresh Dill
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black Pepper

Directions

Step 1

Wash the zucchini thoroughly and use a vegetable peeler or mandoline to slice them into thin ribbons. Set aside.

Step 2

Dice the bacon into small pieces. Heat a large skillet over medium heat and cook the bacon until crispy, about 5-7 minutes. Remove bacon with a slotted spoon and place on a paper towel-lined plate to drain.

Step 3

Drain excess bacon fat from the skillet, leaving about 1 tablespoon in the pan. Add the olive oil to the skillet and reduce the heat to medium-low.

Step 4

Mince the garlic cloves and add them to the skillet. Cook for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 5

Increase the heat to medium and add the zucchini ribbons to the skillet. Toss to coat in the garlic and oil and cook for 2-3 minutes until just tender but still slightly firm.

Step 6

Season the zucchini with salt and black pepper, then add the crispy bacon back to the skillet and toss gently to combine.

Step 7

Remove the skillet from the heat and stir in the fresh lemon juice and chopped dill.

Step 8

Crumble the feta cheese over the zucchini and bacon mixture, then toss lightly to combine. Serve immediately as a side dish or light main course.
