Ingredients

  • 2 heads Romaine lettuce
  • 1 cup (grated) Parmesan cheese
  • 2 cups (cubed for croutons) French baguette or crusty bread
  • 4 tablespoons Olive oil
  • 2 cloves Garlic cloves
  • 4 fillets Anchovy fillets
  • 2 teaspoons Dijon mustard
  • 2 pieces Egg yolks
  • 3 tablespoons Lemon juice
  • 1 teaspoon Worcestershire sauce
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the baguette into bite-sized cubes and spread them on a baking sheet. Drizzle with 2 tablespoons of olive oil and a pinch of salt. Toss to coat evenly.

Step 3

Bake the bread cubes in the oven for 8-10 minutes, or until golden and crisp. Remove and set aside to cool.

Step 4

Wash and dry the romaine lettuce thoroughly. Chop or tear the leaves into bite-sized pieces and place in a large salad bowl.

Step 5

In a mortar and pestle or using a food processor, mash the garlic cloves and anchovy fillets together until a paste forms.

Step 6

In a medium bowl, whisk together the garlic-anchovy paste, egg yolks, Dijon mustard, and lemon juice until smooth.

Step 7

Gradually whisk in the remaining 2 tablespoons of olive oil to emulsify the dressing. Then stir in the Worcestershire sauce, salt, and black pepper.

Step 8

Pour the dressing over the romaine lettuce and gently toss to coat the leaves evenly.

Step 9

Add the croutons and grated Parmesan cheese to the salad and toss again.

Step 10

Serve immediately, garnished with extra Parmesan if desired.
