  • 6 cups vegetable broth
  • 1 15-ounce can, drained and rinsed canned cannellini beans
  • 4 cups, chopped fresh kale
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon, finely chopped fresh rosemary
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoons black pepper
  • 1 (optional, for added depth of flavor) parmesan rind
  • 0.25 cup, for garnish grated parmesan cheese
  • 4 slices, for serving crusty bread

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened and the onions are translucent.

Stir in the minced garlic and cook for 1 minute until fragrant.
