Ingredients

  • 12 oz spaghetti
  • 6 tbsp butter
  • 0.25 cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 4 cups shredded cooked chicken
  • 2 cups sliced mushrooms
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 0.5 tsp garlic powder
  • 2 tbsp olive oil
  • 1 cup breadcrumbs
  • 2 tbsp chopped parsley (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Step 2

Cook the spaghetti in a large pot of salted boiling water until al dente according to the package directions. Drain and set aside.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms and cook until they are softened and browned, about 5 minutes. Remove the mushrooms and set aside.

Step 4

Melt the butter in the same skillet over medium heat. Once melted, whisk in the flour to form a roux. Cook for 1-2 minutes, stirring constantly.

Step 5

Gradually whisk in the chicken broth and heavy cream, making sure there are no lumps. Cook the mixture for 3-5 minutes until it thickens.

Step 6

Stir in the Parmesan cheese, salt, pepper, and garlic powder until the cheese is melted and the sauce is smooth.

Step 7

Add the cooked spaghetti, cooked mushrooms, and shredded chicken to the skillet. Toss everything together until evenly coated with the sauce.

Step 8

Transfer the mixture to the prepared baking dish, spreading it out evenly.

Step 9

Top with shredded mozzarella cheese and breadcrumbs.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

Step 11

Remove from the oven and let the tetrazzini cool for 5 minutes. Garnish with chopped parsley before serving.
