Ingredients

  • 4 pieces Chicken breasts or Salmon fillets
  • 8 slices Canned pineapple slices (in juice)
  • 0.5 cup Soy sauce
  • 3 tablespoons Honey
  • 2 tablespoons Brown sugar
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 1 tablespoon Sesame oil
  • 2 teaspoons Cornstarch
  • 2 tablespoons Water (cold)
  • 2 tablespoons Vegetable oil
  • 2 stalks Green onions (sliced thinly)
  • 1 tablespoon Sesame seeds (optional, for garnish)
  • 4 cups Cooked rice (for serving)

Directions

Step 1

In a medium bowl, whisk together soy sauce, honey, brown sugar, minced garlic, grated ginger, and sesame oil to make the teriyaki marinade.

Reserve 1/3 cup of the marinade for later. Pour the remainder over the chicken breasts or salmon fillets and marinate in the refrigerator for 20-30 minutes.

Heat the vegetable oil in a large skillet over medium heat. Remove the chicken or salmon from the marinade and pat dry with paper towels.

Cook the chicken breasts for 6-8 minutes per side (or salmon for 4-5 minutes per side), until fully cooked and golden brown. Remove from the skillet and set aside.
