Ingredients

  • 2 cups Edamame (in pod, fresh or frozen)
  • 3 tablespoons Soy sauce (low-sodium preferred)
  • 2 tablespoons Mirin (sweet rice wine)
  • 1 tablespoon Brown sugar
  • 2 teaspoons Garlic (minced)
  • 1 teaspoon Ginger (fresh, grated)
  • 1 teaspoon Cornstarch
  • 2 teaspoons Water (for cornstarch slurry)
  • 1 teaspoon Sesame oil
  • 1 teaspoon Toasted sesame seeds
  • 1 tablespoon Green onions (sliced for garnish, optional)

Directions

Step 1

1. If using frozen edamame, bring a pot of water to a boil. Add the frozen edamame and cook for 4-5 minutes, or according to package instructions. Drain and set aside.

2. In a small bowl, mix the cornstarch and water to create a slurry. Set it aside.

3. Heat a small saucepan over medium heat. Add the soy sauce, mirin, brown sugar, garlic, and ginger. Stir well to combine and bring the mixture to a gentle simmer.

4. Once simmering, stir the cornstarch slurry to recombine and then slowly pour it into the saucepan while whisking continuously. Allow the sauce to thicken for about 1-2 minutes, then remove from heat.
