Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 large green bell pepper, diced
  • 1 large red bell pepper, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 15 ounces tomato sauce
  • 14.5 ounces diced tomatoes (with juice)
  • 0.75 cup uncooked white rice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked. Remove and set aside, draining any excess grease if necessary.

Step 2

In the same pot, add the diced onions and bell peppers. Sauté for 5 minutes, or until softened.

Step 3

Stir in the minced garlic and cook for 1 additional minute until fragrant.

Step 4

Return the cooked ground beef to the pot. Add the beef broth, tomato sauce, and diced tomatoes with their juice. Stir to combine.

Step 5

Add the uncooked rice, Italian seasoning, paprika, salt, black pepper, and sugar (if using). Stir well.

Step 6

Bring the soup to a gentle boil. Once boiling, reduce the heat to low, cover, and let simmer for 25-30 minutes, stirring occasionally, until the rice is tender.

Step 7

Taste and adjust seasoning if needed.

Step 8

Serve the soup hot, garnished with freshly chopped parsley. Enjoy!
