Ingredients

  • 4 pieces Flounder fillets
  • 1 cup Lump crab meat
  • 0.5 cup Breadcrumbs
  • 0.25 cup Parmesan cheese, grated
  • 2 tablespoons Parsley, fresh and chopped
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Butter, melted
  • 1 tablespoon Olive oil (for greasing baking dish)

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease a baking dish with olive oil and set aside.

Step 2

In a medium bowl, combine the lump crab meat, breadcrumbs, Parmesan cheese, chopped parsley, lemon juice, Dijon mustard, salt, and black pepper. Mix gently until well combined.

Step 3

Place the flounder fillets flat on a clean surface. Spoon the crab stuffing mixture evenly onto the center of each fillet.

Step 4

Carefully roll up each fillet around the stuffing and place them seam-side down in the prepared baking dish.

Step 5

Brush the stuffed fillets with melted butter to enhance the flavor and help them brown in the oven.

Step 6

Bake in the preheated oven for 20-25 minutes, or until the fish is opaque and flakes easily with a fork.

Step 7

Serve hot with a wedge of lemon and a side of your choice, such as rice pilaf or steamed vegetables.
