Ingredients

  • 4 large Russet potatoes
  • 1 medium Yellow onion
  • 2 Celery stalks
  • 3 Garlic cloves
  • 4 cups Chicken or vegetable broth
  • 1 cup Milk
  • 0.5 cup Heavy cream
  • 3 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Shredded cheddar cheese
  • 0.25 cup Chopped green onions
  • 0.5 cup Cooked bacon crumbles

Directions

Step 1

Peel the potatoes and cut them into 1-inch cubes. Set aside.

Step 2

Dice the onion and celery, and mince the garlic cloves.

Step 3

In a large stockpot, melt the butter over medium heat. Add the diced onion and celery, and cook until softened, about 5 minutes.

Step 4

Add the minced garlic and cook for 1 minute until fragrant.

Step 5

Sprinkle the flour over the vegetables, stir, and cook for 2 minutes to remove the raw taste of the flour.

Step 6

Slowly pour in the chicken or vegetable broth, stirring constantly to prevent lumps.

Step 7

Add the cubed potatoes to the pot and bring the mixture to a boil. Reduce the heat to a simmer and cook for 20-25 minutes, or until the potatoes are tender.

Step 8

Use a potato masher or immersion blender to partially mash the potatoes in the soup, leaving some chunks for texture.

Step 9

Stir in the milk, heavy cream, salt, and black pepper. Let the soup simmer gently for another 10 minutes.

Step 10

Taste and adjust the seasoning as necessary.

Step 11

Ladle the soup into bowls and garnish each serving with shredded cheddar cheese, chopped green onions, and crumbled bacon before serving.
