Ingredients

  • 500 g Pork shoulder (boneless, sliced into thin strips or small cubes)
  • 3 tbsp Oyster sauce
  • 2 tbsp Soy sauce
  • 1 tsp Sugar
  • 3 cloves Garlic (minced)
  • 1 tsp Fresh ginger (grated or finely chopped)
  • 2 tbsp Vegetable oil
  • 2 tsp Cornstarch
  • 2 tbsp Water (for cornstarch slurry)
  • 2 stalks Green onions (sliced thinly)
  • 0.5 tsp Black pepper (freshly ground)
  • 100 ml Water (for cooking sauce)
  • 1 tsp Sesame oil

Directions

Step 1

In a small bowl, mix together the oyster sauce, soy sauce, sugar, and black pepper. Set aside.

Step 2

In another small bowl, dissolve the cornstarch in 2 tablespoons of water to create a slurry. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork and stir-fry until lightly browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger, stirring quickly to release their aroma, about 30 seconds.

Step 5

Return the cooked pork to the skillet and pour in the prepared sauce mixture. Stir to coat the pork evenly.
