Ingredients

  • 3 tablespoons olive oil
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic cloves, minced
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon dried oregano
  • 28 ounces canned whole San Marzano tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon kosher salt
  • 0.5 teaspoons freshly ground black pepper
  • 0.25 cup fresh basil leaves, chopped
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large saucepan over medium heat.

Step 2

Add the finely diced onion and sauté until soft and translucent, about 5 minutes.

Step 3

Stir in the minced garlic, crushed red pepper flakes, and dried oregano. Cook for 1 minute, stirring frequently, until fragrant.

Step 4

Add the canned San Marzano tomatoes along with their juice. Use a wooden spoon or potato masher to carefully break up the tomatoes into smaller pieces.

Step 5

Stir in the tomato paste, sugar, kosher salt, and black pepper. Mix well to combine.

Step 6

Bring the sauce to a gentle simmer and lower the heat. Cover partially and let it simmer for 25-30 minutes, stirring occasionally to prevent sticking.

Step 7

Remove the lid and continue to simmer for an additional 5-10 minutes to thicken the sauce slightly.

Step 8

Stir in the fresh basil and parsley, then remove the sauce from heat.

Step 9

Taste and adjust seasoning as needed, adding more salt or pepper to your preference.

Step 10

Serve warm over your favorite pasta, use as a pizza sauce, or store in an airtight container in the fridge for up to 5 days.
